Doughnuts!!!

Hi! 

I am more of a blog reader than a blog writer, if you haven't noticed! While reading the  Oh She Glows Blog I found that she had made doughnuts! I was very excited! I haven't had doughnuts in a very long time! I had everything except a doughnut pan. :o(  She had made one by hand, but I was still scared. - This past week I was reading my favorite blog Peas and Thank You, and Mama Pea decided to do an Amazon Store with her favorite things. An item in the store was a doughnut pan! Score! Plus, all profits go to Doembecher Children's Hospital! You should check her store out and her blog. 

On to the Doughnuts! 

Dry Ingredients
1 Cup All Purpose Flour
1/2 Cup Sugar 
1 1/2 tsp Baking Powder
1/4 tsp Salt
1/4 tsp  Nutmeg
1/4 tsp Cinnamon

Wet Ingredients
1/2 Cup Almond/Soy Milk
1/2 tsp Apple Cider Vinegar 
1/2 tsp Pure Vanilla Extract
Egg Replacer for 1 Egg (If you don’t use egg replacer feel free to use 1 egg)
4 Tbs Earth Balance (regular margarine should work too)

Icing Glaze:
  • 1/2 cup powderedsugar
  • 1 tbsp soy milk
  • toppings of your choice
Directions:
Preheat oven to 350F. Take all the wet ingredients and put in a small pot on the stove top on low. Whisk ingredients together to blend well. Do not let the mixture get too hot, it should just be warm to the touch. Mix the dry ingredients together in a large bowl. Add the wet to the dry and mix until just incorporated. Do not over mix. The batter will be very very sticky- but don’t worry. Bake for 12 minutes. Let cool on a cooling rack and top with whatever you'd like! 


I did 1 Chocolate, 2 with icing with coconut/pecans, 2 with plain icing, 2 Cinnamon and sugar, and 1 naked!
